Equipment

  • Instant Pot
  • Silicon Basting Brush
  • Baking Sheet

Ingredients

Rib Rub

  • 1 tablespoon packed brown sugar
  • 2 teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon kosher salt

Ribs and Sauce

  • 2 pounds boneless country-style ribs
  • 1 cup no-sodium added beef broth
  • ¾ cup BBQ sauce, divided more for serving, if desired

Instructions

Rib Rub

  • In a small bowl, add the brown sugar, dried parsley, garlic powder, onion powder, Old Bay Seasoning, black pepper, and kosher salt, mixing well.
  • Generously coat all sides of each rib with the seasonings.

Ribs and Sauce

  • In the Instant Pot, add the broth and ¼ quarter cup of BBQ sauce and mix until combined.
  • Arrange the ribs in the instant pot and make sure all of them are partially submerged.
  • Close the lid and turn the pressure valve to sealing. Cook on high for 20 minutes. When the timer goes off, let the instant pot naturally release pressure for 10 minutes. Test the ribs with a fork for tenderness. If more cooking time is needed, close the lid and cook for 5 more minutes.
  • Once pressure is released, remove the ribs and place them on a baking sheet.
  • Coat the ribs with the BBQ sauce.
  • Broil the ribs on high for 3 minutes on the middle rack or until the BBQ sauce is slightly caramelized.
  • Serve warm with additional BBQ sauce on the side if desired.

Notes

Cook's Tips
  • Pat your ribs dry using a paper towel so the dry rub sticks to the meat.
  • If you are using bone-in ribs, add 3 to 5 minutes to the cooking time.
  • Cook ribs to a safe internal temperature of 145 degrees F.
  • Closely watch your ribs during broiling so they don’t burn.
