Turn plain old pork ribs into outstanding BBQ ribs with this Memphis-style dry rib rub. Inspired by the dry rib rub at Rendezvous Ribs on Beale Street in Memphis, this killer rib rub will have you singing it's praises.

Ingredients

  • 1 tablespoon celery seed divided
  • 2 teaspoons allspice berries divided
  • 2 teaspoons coriander seed divided
  • ¼ cup paprika
  • 2 tablespoons garlic powder
  • 2 tablespoons chili powder
  • 1-½ tablespoons freshly ground black pepper
  • 2 teaspoons mustard seed
  • 1-½ teaspoons oregano leaves
  • 1-½ teaspoons dried thyme

Instructions

  • Using a mortal and pestle, grind 1-½ teaspoons celery seed, ½ teaspoon allspice berries, and ¼ teaspoon coriander seed.
  • In a medium bowl, combine the ground seeds, the paprika, garlic powder, chili powder, black pepper, mustard seeds, oregano and thyme. Transfer dry rub to a tightly sealed container. Store in a cool, dry place for up to 1 year.

Notes

In place of the mortar and pestle, use a spice grinder.
