How To Make the Best No Bake Cheesecake Balls
Step 1: Line 2 baking sheets with parchment paper.
Step 2: Using a stand mixer, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and beat until smooth and creamy.
Step 3: Using a round tablespoon, scoop 1-inch balls from the cream cheese mixture. Using your hands, quickly roll the cheesecake into nicely formed balls and place on the prepared baking sheet. Repeat with the remaining cheesecake mixture.
Step 4: Place the baking sheet in the freezer for 30 minutes to 1 hour.
Step 5: Meanwhile, add the chocolate wafers to a small deep bowl and microwave on high for 30 seconds, stir, and repeat until wafers are fully melted and smooth.


Step 6: Remove the cheesecake balls from the freezer. Using wooden skewers or a small cookie scoop, dip a ball into the chocolate coating, completely covering the cheesecake filling. Allow a little excess melted chocolate to drain off and place on the remaining prepared cookie sheet. Sprinkle with toffee bits. Repeat with the remaining cheesecake bites.
Step 7: Refrigerate cheesecake round balls at least 5 minutes or until ready to serve.

- You can use a hand mixer to mix the ingredients, but I find the best way to mix them quickly and efficiently is with the stand mixer if you have one.
