    Who doesn't love a nice slice of cheesecake? Now, you don't have to fiddle with making a fickle cheesecake, instead, you can make these no bake cheesecake balls. These delicious cheesecake bites are rich, creamy, and silky on the inside and are dipped in smooth chocolate on the outside. Then they're topped with tasty toffee tidbits to really send this dessert to a whole new level.

    Why You’ll Love This Cheesecake Balls Recipe

    No Bake. No bake recipes mean no need to turn the oven on to heat the whole house! No need to babysit it on the stovetop either trying to get the cheesecake to turn out just right. No bake cheesecake recipes are foolproof and will turn out perfect every time.

    Fast Prep. You only have less than 20 minutes of prep time to make these tasty treats, but then you have to wait for them to chill- that's the hardest (and longest) part.

    Individual Bites. These bites are perfect for when you just want a smaller dessert portion, not a whole slice of cheesecake. You can still enjoy this tasty dessert without as much guilt!

    5 Ingredients. You only need 5 simple ingredients to make these no-bake cheesecake bites.

    Make sure the cream cheese is completely softened. It makes mixing the cheese so much easier.

    How To Make the Best No Bake Cheesecake Balls

    Step 1: Line 2 baking sheets with parchment paper.

    Step 2: Using a stand mixer, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract and beat until smooth and creamy.

    Step 3: Using a round tablespoon, scoop 1-inch balls from the cream cheese mixture. Using your hands, quickly roll the cheesecake into nicely formed balls and place on the prepared baking sheet. Repeat with the remaining cheesecake mixture.

    Step 4: Place the baking sheet in the freezer for 30 minutes to 1 hour.

    Step 5: Meanwhile, add the chocolate wafers to a small deep bowl and microwave on high for 30 seconds, stir, and repeat until wafers are fully melted and smooth.

    Step 6: Remove the cheesecake balls from the freezer. Using wooden skewers or a small cookie scoop, dip a ball into the chocolate coating, completely covering the cheesecake filling. Allow a little excess melted chocolate to drain off and place on the remaining prepared cookie sheet. Sprinkle with toffee bits. Repeat with the remaining cheesecake bites.

    Step 7: Refrigerate cheesecake round balls at least 5 minutes or until ready to serve.

    Cook's Tips

    • You can use a hand mixer to mix the ingredients, but I find the best way to mix them quickly and efficiently is with the stand mixer if you have one.
    • Make sure the cream cheese is completely softened. It makes mixing easier.
    • If the cheesecake mixture feels grainy after mixing, continue mixing until it's smooth.
    • Wash your hands with soap and water before making the cheesecake bites. You can also use tight fitting kitchen gloves to roll the balls.
    • In this recipe, I used a candy dipper to dip the cheesecake balls instead of a wooden skewer. A really fun presentation is to use lollipop sticks and keep them in the cheesecake bites for serving.
    • You can also use a cookie scoop to create the cheesecake balls, this will ensure that they're all the same size too.

    Variations

    Vary the colors for holidays and celebrations. Use any color wafer melts that you prefer. Orange melts with black sprinkles are great for Halloween. The effect is similar to these cocoa bombs. Try seasonally colored wafers to make cheesecake bites for any event, such as these Easter hot cocoa bombs. This is an easy recipe to use for various holidays.

    Change up the toppings. Use alternative sprinkles such as finely chopped nuts, candy sprinkles, mini butterscotch morsels, mini M&Ms, mini chocolate chips, rainbow sprinkles, or crushed peppermint candy. You could also add chocolate drizzle on top of this perfect sweet treat, with a complementary color of melted wafers that you melt and then drizzle on top. Or simply use milk chocolate sauce or caramel sauce.

    Add graham cracker crumbs. For all of you whole cheesecake lovers who enjoy a good graham cracker crust, you can crumble up some graham crackers in a food processor and sprinkle them on top like you would the toffee on top of these little bites.

    Storage

    For best results, store your no bake cheesecake bites in an airtight container for up to 5 days. You can also choose to freeze these mini cheesecake bites in the freezer, in a freezer safe container or bag for up to 2 weeks.

    There are not many desserts that are better than a rich and creamy cheesecake. Unless of course it is these no bake cheesecake balls that you can just pop right in your mouth. These darling little cheesecake balls are coating with chocolate and then sprinkle with toffee bits for a dessert treat that will delight everyone.
